Can anyone recommend a good quality sandwich plate for oil pressure and oil temperature gauges that will not leak.

No need for a sandwhich plate to install gauges
you can add a pressure tapping into the existing pressure switch port on a piece of hose to move it away from the engine
and modify an oil cooler bolt to screw the temp sensor directly into the back so you get oil exit temp of the engine

see here for modifying the oil cooler bolt

and note the issue with going too deep with a NPT tap, best off doing it a bit checking with your gauge sensor and then re-cutting deeper as required as the metal on machine is far harder to operate than the metal off machine
for oil pressure on mine I used a 3/8BSP Banjo bolt and -3 hose to take off from the oil pressure sensor port and then fitted a Tee Piece up by the washer bottle with the gauge sensor and original low pressure light sensor screwed into that

you can take the pressure also from a banjo bolt the one last in line before the engine. the oil temp should be measured before cooling not after. a temp sensor after cooler is measuring what the oil coolers are doing without knowing anything what is happening in engine.
Sandwich plate is very bad solution for our engines for temp sensing because of it (unless you have 2 temp sensors)

I made a whole bunch of modified oil banjo bolts to take sensors (got a pair on mine for pressure & temp) that I sent to SmuttyHutty FOC so that he could dish them out to members as he pleases.

From specs on page I would say that the one. You should be able to find it most tool stores local to you.
Dont forget don't cut the tread all the way through as its cone shaped. But cut and test with the sensor so its getting enough engagement. Noo need to have the whole threat in (few can be left exposed) as if there is no thread the "cone" will not be tight and wont seal ..
