Sound like its alot of work but I wouldn't mind learning how ro do it and now looking into it I'd want to tweak a couple of other things.

Bar from Mazdaedit is there any other software/hardware I can use to gain access to the ecu. The cars is going to be sat for the next 4 months so its the perfect time to have a good go at tweaking things.

Not really; there's nothing one can do the other can't, for a self tuner I'd say the support network and software support is better with versatune.

As Im more familiar with Mazdaedit i tend to use that but if i were starting over it wouldnt be a straight cut decision.

can you just remap the target idle speed?

Mazdaedit development is very slow /doesn't exist.
I believe versatune is constantly being developed

Quick question, how does the VE table control/affect the fuelling?
