cut excess weight from front and rear bumpers
removed airbags and associated electronics
Mazda Cup steering wheel
Stripped excess wiring leaving bear essentials
Volk rims
removing heating system over winter
Anything i've missed?

Assuming you've also cut the boot lid down and installed a light weight fly wheel/counter weight? You may be able to cut some off the bonnet too, but you're not talking much there. Brake calipers (and while you're at it discs) can also be swapped to lighter items, but rather costly. Engine lift hoops if still installed. Exhaust heat shield under the boot. Battery/air box trays. Potentially one of the oil coolers as long as you're happy running on one. This would also save a lot of hose length. Gut the electric mirrors, and strip back the wiring harness for removed parts.

Bonnet is aluminium so pretty light but there would be down decent savings from cutting the bootlid structure a bit

Another one for the list that I have just discovered, the passenger side dash pad is surprisingly heavy due to all the Bracketry for the airbag.
