never went above 100 degrees water temp Why not? The cooling system is designed to run between 105-115°C, which is why it's pressurised. Staying below 100°C on track suggests that there's either something wrong, and you're loosing power, or it's being measured in an unusual place in the circuit.

Could just be air in the system, letting the pedal travel too far, or the pedal free-play is incorrectly adjusted.

The difference is diameter between 225/40R19 and 255/35R19 is less than 0.25%, so that's not an issue. The problem is that the OEM wheels are 8J and nearly all 255/35 tyres are only certified to run on rims between 8.5J and 10J. People do run 255's on 8J but it's not a good idea and you would invali...

The layout of the electrical connections, reverse and neural switches, is also different, so some changes required to the loom.

When was the gearbox oil last changed? What oil was used?

The R3 'box isn't as fussy about using GL-4 oil as the S1 6-speed, but it hates worn-out or cheap oil.

If you've got an aftermarket gauge, just be wary if it goes really high (120+) and then drops to below normal.

This is what happens if the engine overheats, then dumps out so much coolant that the temperature sensor is no longer wet.
